We are trying to plan a trip to Las Vegas in May but the package costs are somewhat high. Has anyone had a positive experience with booking a last minute trip.

The airfare will kill you. Almost all the airlines require 14-21 days advance purchase for better rates. The fares go up dramatically when you get closer to your travel dates.
You are probably better off booking your own airfare and then booking your room direct with the hotel.

Try www.smartervegas.com for promo codes on hotels, this books directly thru the hotel and if a cheaper rate comes along you can always rebook at the cheaper price.
